Cooking with Paige & Joanne #3: Mojitos

Hey Guys!

It's time for a very overdue instalment of what was supposed to be a monthly post...but me and Paige's cooking got a bit lazy and we both have been very busy. If you haven't read the first 2 Cooking with Paige & Joanne posts, 1. you really missed out, and 2. they are here and here. The last two instalments have been baking related, so this time we thought we'd do a bit of a different one and make our favourite cocktail, a Mojito!
These are super easy to make and great for summer, we used this recipe here.

You will need:
  • A Tall Glass
  • 2 Parts Bacardi Superior Rum (about 50ml)
  • ½ Fresh Cut Lime
  • 12 Fresh Mint Leaves 
  • 2 heaped spoons of Sugar
  • Dash of Soda Water
  • Crushed Ice – To Fill
  • Sprig of Fresh Mint To Garnish
  • A muddler (or rolling pin)
  • A spoon
these ingredients are per drink.
Method:
First, get your lime and cut it in half and then cut the half into four. Put the four lime wedges into a glass. Add the sugar and muddle (squish everything together) to release the lime juice

Put the mint leaves on one hand and clap, because as Jamie Oliver says "everything is better with a little spank". But seriously, this bruises the leaves and releases the aroma. Rub the mint leaves around the rim of the glass and drop them in. Use a muddler, or a rolling to gently push the mint down into the lime juice.

Half fill the glass with crushed ice and pour in the Bacardi Superior rum. Stir the mix together until the sugar dissolves.

Top up with crushed ice, a splash of the club soda water and garnish it with a sprig of mint.
It really is that simple and you have a great summer drink!
